There is always one thing my family can count on for the new year -
Grapefruit!
We load up at the grove of grapefruit trees near my parents' house at Christmas
and bring the juicy, ruby reds home by the basketful.
In my never ending quest to make the most of our harvest,
I combined two of my favorite breakfast treats,
cinnamon toast and broiled grapefruit.
Introducing,
Grapefruit Cinnamon Toast...
All of the comforting sweetness of cinnamon toast,
topped with the slightly tart freshness of fresh grapefruit wrapped into one.
Simply peel grapefruit and remove as much of the pith as you can, then thinly slice
(I have the best luck using a serrated bread knife)
place grapefruit slices on top of lightly toasted and buttered English muffins....
sprinkle with cinnamon sugar,
(and I use a grapefruit spoon because it reminds me of when my mom used to serve halved grapefruit and we'd have to dig out the segments with them!)
then place under the broiler for one minute or less,
until the cinnamon sugar slightly crystalizes...
Simple, fresh and sweet,
just what I'm hoping to squeeze out of 2016.
