Let it Snow, Let it Snow, Let it Snow!
Christmas Trees are decorated, warm coats and boots are donned,
carolers are singing and it's time to hit the slopes.
My favorite part of skiing happens to be "apres"
and this year we're celebrating a day on the mountain with
a Skiers' Delight Hot Cocoa Cocktail...
Hot, sweet and creamy,
everyone will be racing to the lodge to get theirs...
Just a few simple ingredients are all you need to make the cocoa and the whipped cream topping.
I love using unsweetened dark chocolate chips and
then adding Sweet 'N Low to my cocoa.
It is a zero calorie sweetener so
it adds just the right sweetness without the extra calories.
Even after a day of shredding down those hills,
it is always great to cut back on calories wherever you can.
This warm cocktail gets kicked up just a notch
with a touch of Baileys Irish Cream...
and then topped with fresh whipped cream
mixed again with Sweet 'N Low for a kiss of sweetness...
then a dusting of coconut because a day of skiing is all about the "shred", right?
What time can I expect to see you at the bar?
Skiers' Delight Hot Cocoa Cocktail
serves 2
for the whipped cream
1 cup heavy whipping cream
2 packets Sweet 'N Low Sweetener
for the cocoa:
2 cups whole milk
1 cup unsweetened dark chocolate chips
4 packets Sweet 'N Low Sweetener
2 ounces Baileys Irish Cream
shredded coconut for topping
Place whipping cream and Sweet 'N Low in a metal bowl and mix on high with an electric mixer with whisk attachment or hand mixer (or if you're really brave you can use a whisk and beat by hand).
Mix until light and fluffy.
In a saucepan mix together milk, chips and Sweet 'N Low on medium to low heat until combined and chips are melted. Remove from heat and add Baileys Irish Cream.
Pour into mugs and top with whipped cream and coconut.
