Throughout the week,
it seems like I am always eating lunch on the go.

I've also found it's the easiest time of day to eat healthy.
It's got to be deliciously convenient, quick to make and if it's gorgeous that always helps!
Well, my mid-day meals from now on are going to be a whole lot "wilder".
The chef-inspired, Eat Smart Wild Greens and Quinoa Vegetable Salad,
is my newest obsession...
It is a mixture of seven super foods:
kale, beet greens, julienned broccoli, carrots, red cabbage,
crispy quinoa and almonds,
plus feta cheese and an awesome avocado herb dressing.
Oh, and did I mention CRISPY QUINOA?!?
Along with the almonds, these plant based proteins
add just the right crunch to this wild and colorful salad...
