Why is it that everyone always congregates in the kitchen?
Maybe it's because a fresh batch of Lemon Glazed Donuts
just came out of the oven!
These citrusy, sweet bites of goodness are ready in minutes...
and seem to be gone before the glaze sets...
Lemon Glazed Donuts
Makes about 3 dozen donuts
Special Tool: non-stick Donut Pan
Lemon Donut ingredients:
(you can easily used a packaged Lemon Cake Mix also)
Preheat oven to 350 degrees and coat Donut Pan with non-stick spray
2 1/4 cups all-purpose flour
2 1/4 tsp baking powder
1/2 tsp salt
4 eggs
2 cups sugar
1 tsp vanilla extract
2 tbs lemon zest
2 tbs + 2 tsp lemon juice
1 1/4 cups whole milk
10 tablespoons unsalted butter, cubed
Lemon Glaze:
2 cups powdered sugar
1/4 cup fresh squeezed lemon juice
mix or whisk ingredients then drizzle over warm donuts below
Lemon Zest for topping
For Donuts:
Mix flour, baking powder and salt in a small bowl and set aside. In large bowl, beat eggs and sugar then mix in vanilla, lemon juice and lemon zest. Slowly pour in dry ingredients and mix on low until combined.
In a small saucepan, heat milk and butter until butter is just melted, being careful not to let milk boil. Then mix into batter. Pour into prepared Donut Pan. You want to only fill the donut molds about half way. Cook approximately 10 to 12 minutes. Remove from oven and after a few minutes gently lift donuts out of pan and place on rack. Drizzle glaze over while still warm then top with lemon zest.
