A Fiesta-worthy Salad,
that is as colorful and fun to look at as it is to devour!
The key is the Verde Goddess Dressing
that is creamy, tangy and vibrant...
I throw all the ingredients in the blender and it's ready...
pronto!
Poured over chopped fresh veggies, grilled chicken, pinto beans and cheese...
and you'll be salivating in your sombrero...
Chopped Taco Salad
1 large head of Romaine lettuce chopped
Grilled Chicken
1 diced orange bell pepper
1 cup diced tomatoes
1 can pinto beans, drained and rinsed
1 cup diced jack cheese
Toss with Verde Goddess Dressing below and top with freshly fried tortilla strips or crumbled tortilla chips.
Verde Goddess Salad Dressing
1 cup chopped scallions, white and green party
1/2 cup chopped basil leaves
1/2 of an avocado chopped
1/4 cup freshly squeezed lemon juice
1/4 cup freshly squeezed lime juice
1 tsp chopped garlic
2 tsp anchovy paste
2 tsp kosher salt
pinch of pepper
1 cup sour cream
1 tsp white wine vinegar
2 Tablespoons olive oil
Place all ingredients but olive oil in a blender and mix until combined. While blender is still going, drizzle in olive oil. And just for a little Mexican flare - serve in a sterilized Coronita Beer bottle!
