For lack of a better term, I am "nuts" about pistachios!
Fun to pop open, cheerful in color, delicious and the perfect snack.
They are pegged to be a top food trend in 2015 and have been dubbed the "skinny nut".
They are one of the lowest calorie and lowest fat nut, full of fiber and protein.
I declare this,

In my never ending quest to eat more healthfully,
I have to make it interesting and fun.
Pistachios add pizzazz and pair perfectly with my
"easy being green snack-fest".
All green, all good...
Did you know 30 pistachios have only about 100 calories?
I love eating them out of the shell because it slows me down so I can enjoy each one
and visually seeing the empty shells, helps me keep track of how many I've had.
Their savory, slightly salty flavor is perfect with
arugula lightly dressed with freshly squeezed lemon juice, olive oil and shaved parmesan...
crisp apples dusted with cinnamon sugar...
(there is nothing better than a salty and sweet combo)

and a refreshing, sparkling green tea spritzer.
