Still my favorite Summer Appetizer

I don't know what it is but I just can't get enough
Burrata Cheese or Arugula.
Before our friends had us over 2 years ago and they served this appetizer, 
I really had never eaten much of either.



I literally make this for our family once a week.
Quick, easy, fresh and healthy.
Arugula and Burrata Topped Crostinis...

I don't have a formal recipe but the ingredients are:

Arugula
Burrata Cheese
Baguette
Lemon
Garlic
Olive Oil
Salt


Slice the baguette and toast until golden brown,
then rub each slice with garlic...



Mix arugula with lemon, a touch of olive oil and a little salt...
(I just do it to taste, 
the amount of lemon all depends on how much arugula you are using
 and how lemony you like it)


Top each crostini with Burrata Cheese...


and then with the arugula mixture...
and be prepared, 
they won't know what to think at first 
and then everyone will be back for more and ask what is in it.

  1. I've never heard of Burrata cheese! I'm quite anxious to try it. As long as it's not like bleu cheese, yeeeyuck.
