I don't want to offend anyone with the name of one of our favorite salads but…
My husband's brother is a wonderful chef.
He studied in Europe and has worked at some of the top restaurants in the United States.
Years ago he stayed with us and made us a salad,
a salad of iceberg lettuce topped with cheddar cheese.
Not the typical culinary creation of a top chef.
It was delicious and refreshingly different, but non-the-less we dubbed it
The White Trash Salad.
We often make it as a tossed salad, but recently we have turned it into a wedge.
One of the best components is the dressing...
3 tablespoons red wine vinegar
2 cloves garlic, finely chopped
3/4 cup olive oil
1 tsp dried oregano
place all ingredients in a jar or bowl and let them sit at least 30 minutes…
(Uncle Paul says that is the key)
get your wedges ready and sprinkle with salt...
Shake or whisk dressing and pour on wedges...
top with grated sharp cheddar and dig in!
