I have never been a big fan of cooked carrots...until now.
This recipe from Heather Bullard,
converted me!
Gather Carrots...
clean them up...
brush with sweet, savory and slightly spicy glaze and roast...
I am finally eating my carrots!
Chipotle Carrots
1 lb of carrots with tops
1 Tablespoon olive oil
1 Tablespoon pure maple syrup
1/4 tsp sea salt
1/8 tsp cracked black pepper
1 Tablespoon chopped chipotle peppers in adobo
1 Tablespoon olive oil
1 Tablespoon pure maple syrup

Preheat oven to 425. Line baking sheet with parchment paper
Wash carrots and trim tops and peel.
Mix olive oil, maple syrup and chipotle peppers in a small bowl.
Brush mixture on each carrot with a pastry brush and sprinkle with sea salt and pepper.Wash carrots and trim tops and peel.

Roast in oven for 20 minutes or until golden brown.
